Build it on
the board.

Six cheeses are out this week. Say how many are coming and we cut it that morning, put a label under every piece, and hand it over with a card saying what is on it.

Six people, about $33.$22 to $28 a pound. A board for six is 21 ounces, which is $5.47 a head. Nothing is charged until you collect it.

Goes withRye, cider, a handful of walnuts. Marco will not put a cracker on it.

Tap a label to take a cheese off. The shelf below puts one back.

Six cheeses on the shop's oak board: a halved ash-rubbed goat log, a clothbound cheddar wedge, a brine-washed round, a twelve-month alpine wedge, a bloomy round with a slice out, and a blue wedge.

Six people$0.00

Cut Thursday morning. Wrapped in cheese paper, labelled by hand, and in a box with a cold pack.

The shelf, this week

Six cheeses in the cave, all of them cut this week. Tap a row to put one on the board or take it off.

What comes
with it.

A board is a box, not a plate. It travels, it keeps, and it comes with the words to explain it to the table.

In the box
Cheese paper, a label for each one, a card naming every cheese and what to eat it with, and a cold pack under the lot.
It travels
Two hours in a car, four in a cool bag. Leave it in the box until you are ready to put it out.
It keeps
Four days wrapped in the fridge, and a week for the blue. Take it out an hour before you serve it.
Pickup
Thursday to Sunday, 10 to 6, at 218 Warren Street, Hudson, New York. Call 518 828 0142 and we will have it ready.
Paying
At the counter when you collect, or on the phone. No deposit, and nothing is taken from this page.

The cave

Ripe is a place.

Under the shop is a brick room at fifty-two degrees and ninety-two percent. What sits on the front shelf is cut this week. The two batches behind it are not ready yet: hold one and it goes on your ticket for the day it can leave.

Fifty-two degrees, ninety-two percent, all year. Nothing on this page is real cheese.

Tickets from the counter.

Four from the spike by the register. The rest are in a shoebox under it.

Pickup

The ticket goes
in the bag.

The board you built is the ticket. It says what is in the bag, what it weighs, and the first day it can leave the cave, which is not always today.

  • Cut the morning you collect it
  • Wrapped in cheese paper, labelled by hand
  • Kept in the cave until you ask for it
  • Bring the ticket back and we will cut the same again
